Flame of banana flambé?

Have you seen how a banana flambé is prepared? When wine is added to the bananas while being heated a pink, almost fuchsia colored flame is reproduced. how would you account for this observation.

BANANA FLAMBE





An end to a great BBQ, even the dessert is made on the grill. For the kids just prepare a small one on the side without the liqueur. Serves 4


1 Store bought pound cake 1


1/4 cup Butter 50 mL


1/3 cup Firmly packed light-brown sugar 75 mL


3 small Ripe bananas 3 small


1 cup Strawberries, hulled and halved 250 mL


1 tbsp Grated orange peel 15 mL


1/4 tsp Cinnamon 1 mL


1/4 cup Orange flavored liqueur 50 mL


Vanilla ice cream





# Cut pound cake into 16 slices (1/4 inch [1 cm] thick) On clean grill, cook cake slices on low until toasted on both sides. Set aside.


# In large cast-iron skillet on grill, over medium heat, melt butter with sugar. Peel and halve bananas crosswise, cut halves lengthwise in half. Add bananas to butter mixture, saute 2 min, turning once. Remove pan, stir in strawberries, orange peel, cinnamon.


# Carefully flame liqueur, pour over fruit.


# On each four serving plates, place 2 slices of cake. Top each cake slice with a scoop of ice cream; spoon fruit mixture over ice cream. Place a cake slice on top of each scoop, tilting slices toward each other to resemble butterfly wings. If desired, sprinkle with orange-peel slivers.
